WNC now has local REAL maple syrup! I traveled out to Mollie and Richard's farm, Maple Creek Farm, in Madison County, NC. Richard was once the forest manager of Warren Wilson College's forests. Mollie is an alum of Warren Wilson College and is also employed with Appalachian Sustainable Agriculture Project. We purchased two of their largest bottles of syrup for the pancakes we will be having during Spring Break. While I was out there buying syrup, I caught some video of their production facility and the Maple tree grove that produces the sweet nectar:
